Ox liver has all iron flavours of liver with an intense, beefy twist. It has a robust flavour and stands up well to strong sauces. Ox liver is easy to prepare, delicious and is among the most nutritious foods on the planet. Liver contains high amounts of vitamins such as B12, as well as copper and other essential nutrients.
Even the best meat still requires expert preparation, so we work with master butchers who ensure our ox liver is immaculate. All our cuts are skilfully prepared by hand in time-honoured, traditional fashion. We never compromise on our standards, which is central to maintaining the quality you have come to expect.

Cooking Instructions
 
Here’s cooking instruction for preparing ox liver:
1. Prep the liver: Start by rinsing the ox liver under cold water to remove any excess blood. Pat it dry using paper towels. Remove any tough membranes or connective tissues if present.
2. Season the liver: Season the liver with salt and pepper or any other preferred spices or herbs. You can also marinate it in a mixture of olive oil, garlic, and herbs for added flavour.
3. Heat the pan: Place a skillet or frying pan over medium-high heat. Add a small amount of oil or butter and let it heat up.
4. Cook the liver: Once the pan is hot, carefully place the liver slices in a single layer. Avoid overcrowding the pan, as this can prevent proper browning. Cook the liver for about 2-3 minutes on each side, or until browned on the outside but still slightly pink on the inside. Cooking time may vary depending on the thickness of the liver slices.
5. Rest and serve: Remove the liver from the pan and let it rest for a few minutes to allow the juices to redistribute. This step helps to keep the liver moist and tender. Serve the ox liver immediately while it's still warm.
6. Optional: You can deglaze the pan with a splash of wine or broth to make a quick sauce. Simply add the liquid to the hot pan, scrape the browned bits from the bottom, and reduce the liquid until it thickens slightly. Drizzle the sauce over the liver for added flavour.
Remember, overcooking liver can make it tough and dry, so it's important to keep an eye on the cooking time. Enjoy your ox liver!
Storage Instructions
To maintain the freshness and quality of Ox Liver, it is recommended to store it in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Place the liver in an airtight container or wrap it tightly in plastic wrap to prevent any exposure to air or odors. Properly stored, Ox Liver can maintain its freshness for up to 1-2 days. If you wish to store it for a longer period, you can also freeze the liver. Wrap it tightly in plastic wrap and aluminum foil or place it in a freezer-safe bag or container. Frozen Ox Liver can retain its quality for approximately 2-3 months. When ready to use, thaw the liver in the refrigerator before cooking.

To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.
