T-Bone Steak from The Black Farmer
The T-Bone steak is a classic cut, loved for its rich flavour and unique combination of two distinct steaks in one. This cut features both the tender fillet and the juicy sirloin, separated by a T-shaped bone, making it a favourite among steak enthusiasts. At The Black Farmer, our T-Bone steaks are sourced from local farms in Wiltshire, Somerset, and the South West, where our grass-fed, free-range cattle enjoy a stress-free life in the beautiful British countryside.
Is T-Bone a Good Cut of Steak?
Yes, T-Bone is considered one of the best cuts of steak. It offers the best of both worlds: the tenderness of a fillet and the rich, beefy flavour of the sirloin. This combination makes it a versatile and highly sought-after choice for steak lovers.
What Two Steaks Make Up a T-Bone?
The T-Bone steak consists of two different cuts: the fillet (also known as tenderloin) on one side of the bone and the sirloin (or strip steak) on the other. This combination gives the T-Bone its distinctive flavour and texture profile.
How is T-Bone Steak Best Cooked?
For the best results, cook T-Bone steaks over high heat, such as on a grill or in a hot skillet, to develop a good sear and crust on the outside while keeping the inside juicy and tender. It’s ideal to cook the steak to medium-rare or medium to retain its moisture and enhance its flavour.
How Do I Make My T-Bone Steak More Tender?
To ensure your T-Bone steak is tender, avoid overcooking it and let it rest after cooking. Resting allows the juices to redistribute throughout the meat, resulting in a more tender and flavourful steak. Marinating the steak before cooking can also help to enhance tenderness.

Cooking Instructions
T-Bone Steak Cooking Instructions
Grill Method:
Preparation: Remove the T-bone steak from the fridge 30 minutes before cooking to bring it to room temperature, which ensures even cooking.
Seasoning: Rub with olive oil, sea salt, and freshly ground black pepper. Simple seasoning enhances the steak's natural flavors.
Preheat the Grill: Heat your grill or frying pan to high heat. A hot grill will give the T-bone steak those desirable char marks.
Cooking: Grill the T-bone steak for 5-6 minutes on each side for medium-rare. Adjust the time to achieve your preferred level of doneness. The internal temperature should reach 54-57°C.
Resting: Rest the steak for 5 minutes under foil to allow the juices to redistribute.
Serve: Serve with roasted potatoes and a drizzle of red wine sauce for a hearty and elegant meal.
Oven Method:
Preparation: Preheat your oven to 200°C (180°C fan) or gas mark 6. Bring the steak to room temperature before cooking.
Seasoning: Rub with olive oil, salt, and pepper for a classic flavor profile.
Searing: Sear the T-bone steak in an ovenproof pan for 2-3 minutes on each side to develop a golden-brown crust.
Oven Cooking: Transfer the pan to the oven and cook for 10-12 minutes for medium-rare. Adjust the time based on your preferred doneness.
Resting: Let the steak rest for 5 minutes under foil to keep it juicy.
Serving: Serve with roasted potatoes and red wine sauce for a delicious steak dinner.
These steps guide you through cooking T-bone steak on the grill or in the oven, ensuring a tender and juicy result with a perfect char.
Storage Instructions
To maintain the quality and freshness of your T-Bone Steak, it is recommended to store it in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Ensure the steak is properly wrapped or stored in an airtight container to prevent any exposure to air and potential cross-contamination. Stored correctly, the T-Bone Steak can be refrigerated for up to 3-4 days. If you want to extend its shelf life, you can also freeze the steak. Wrap it tightly in plastic wrap or place it in a freezer-safe bag or container before storing it in the freezer. Frozen T-Bone Steaks can maintain their quality for approximately 6-12 months. When ready to enjoy, thaw the steak in the refrigerator and consume it promptly.
