Ribeye Steak from The Black Farmer

Ribeye steak is renowned for its rich flavour and tenderness, making it a top choice among steak lovers. This cut comes from the rib section of the cow and is known for its marbling, which enhances its juiciness and depth of flavour. At The Black Farmer, we source our ribeye steaks from local farms in Wiltshire, Somerset, and the South West, where our grass-fed, free-range cattle enjoy a stress-free life in the beautiful British countryside.

Is Ribeye a Good Cut of Steak?

Yes, ribeye is considered one of the best cuts of steak due to its marbling, which melts during cooking, providing a tender, juicy texture and a robust, beefy flavour. This makes it a favourite among those who appreciate a richly flavoured steak.

What is Special About Ribeye Steak?

Ribeye steak is special because of its marbling – the intramuscular fat that runs through the meat. This fat enhances the flavour and keeps the steak moist and tender during cooking, delivering a melt-in-the-mouth experience.

Is Ribeye Better Than Sirloin?

Ribeye is often preferred over sirloin for its rich flavour and tenderness. While sirloin is leaner and has a firmer texture, ribeye’s marbling gives it a buttery, juicy quality that many find more desirable.

Why is Ribeye Steak So Expensive?

Ribeye steak tends to be more expensive because it comes from a highly prized part of the cow that yields fewer cuts. The marbling and flavour make it a premium choice, often reflected in its price.

Cooking Instructions

Here’s cooking instruction for Ribeye Steak:

1. Preheat your grill or stovetop pan to high heat. Make sure it's well heated before you start cooking.
2. Take the Ribeye Steak out of the refrigerator and let it sit at room temperature for about 30 minutes. This will allow the steak to cook more evenly.
3. Season both sides of the steak generously with salt and pepper, or your favorite steak seasoning. Rub the seasoning into the meat to ensure it adheres well.
4. Place the Ribeye Steak on the grill or in the hot pan. For medium-rare, cook it for about 4-5 minutes per side. Adjust the time based on your desired level of doneness.
5. Flip the steak using tongs, not a fork, to avoid piercing the meat and losing its juices. Continue cooking for the same amount of time on the other side.
6. To check the doneness of the steak, use a meat thermometer. For medium-rare, the internal temperature should be around 135°F (57°C). Remember, the temperature will rise a few degrees as the steak rests.
7. Once the steak reaches your desired doneness, remove it from the grill or pan and transfer it to a cutting board. Let it rest for about 5 minutes. This allows the juices to redistribute and results in a more tender and flavorful steak.
8. After resting, slice the Ribeye Steak against the grain into thin slices. This helps to ensure tenderness.
9. Serve your delicious Ribeye Steak with your favorite side dishes and enjoy!

Remember, cooking times may vary depending on the thickness of the steak and the heat source you're using. Adjust accordingly to achieve your preferred level of doneness.

Storage Instructions

For ideal storage of premium aged rib-eye steak, ensure it's tightly wrapped in butcher paper or vacuum-sealed to prevent air exposure, which can lead to freezer burn. Store it in the coldest part of your freezer, maintaining a temperature of 0°F (-18°C) or below. Properly stored, it can maintain its quality for up to 6-12 months. When ready to enjoy, thaw the steak in the refrigerator overnight for the best results. Avoid refreezing once thawed to preserve its texture and flavour. Enjoy your perfectly aged rib-eye steak!
